Ingredients:
- 1 cup steamed quinoa
- 3 cups diced cucumber
- 4 cups tomatoes, diced
- 1 cup finely chopped red bell pepper
- 1/2 cup diced onion
- 1 cup finely chopped parsley
- 1/2 cup lemon juice
- 2 tsp olive oil
- 1/2 tsp sea salt
- 1 pinch of green pepper, ground
- 2 cloves of garlic, crushed
- 1/2 teaspoon herbs de Provence
- 1 tsp dried algae
-1 drop of mint (essential oil)
Mix all ingredients in a bowl.
Garnish with mint leaves or lamb's lettuce
