Raw Mexican rice


Ingredients:

- 1/2 cauliflower mixed in a food processor until you obtain the appearance of rice 
- 1 tomato, diced 
- 1 cup parsley, chopped
- 1 small red onion, finely chopped 
- 1 green onion, finely chopped 
- 1 cup raw organic corn   
- 1/2 avocado, diced 
- 1 tablespoon lemon juice 
- 1/2 red bell pepper or 1/2 yellow bell pepper, diced 
- 1/2 - 1 cup dried tomatoes + 1 tomato 1 clove garlic, 1 pinch of green pepper, 1 pinch of paprika , all mixed to a thick sauce. 
Mix all ingredients with 1 tablespoon of tamari vinaigrette and stir this hot sauce in.
