Cucumber Sushi Rolls


Ingredients:

- 1/2 avocado
- 1 garlic clove
- Sea salt to taste
- 1 tsp lemon juice
- Turmeric powder
- parsley
- 1 red bell pepper cut into strips or diced
- 1 yellow bell pepper cut into strips or diced
- 1 stalk celery, minced
- 1 tomato, diced or cut into strips
- Cucumbers cut into small cylinders, hollowed
- Dried dill
- Paprika
- Alfa-alfa sprouts
Blend the first 4 ingredients.
For a yellow dip, blend in the turmeric powder and part of the yellow bell pepper; for an orange color, blend in some red bell pepper; for a red color, blend in sweet paprika powder, a portion of tomato and of the red bell pepper; for a green color blend in the parsley.
Stir the  alfa-alfa sprouts in this dip.
Half fill the cucumber cylinders with this mixture and add in the chopped vegetables.
Sprinkle some dried dill on top.
Serve right away.
