Introduction

“Raw Delights –homemade” is a collection of raw, vegan and gluten-free recipes that you can use as basis in the preparation of your own recipes and that you can adjust to your own taste and imagination. These recipes are low in fat, limiting the use of nuts and seeds that are so often consumed in excess in the raw food diet.
 
For some, eating raw food is a necessity (those suffering from hepatic impairment), for others it is a choice and for others, a fashion.


In all cases, weather you try it once a day, once a week or once a month, as a 21 days cure or as a lifestyle choice, the consumption of  living raw food, whether in the form of fresh fruits and vegetables or as dried dishes at maximum 107,6 ° C (42°C), in a dehydrator or an electric oven, provides you with enzymes, vitamins and minerals, rejuvenates the skin, helps lose excessive weight, provides a state of well-being and improves the overall health.


During the cooking/baking at more than 107, 6 ° F (42°C), these enzymes (catalyzers of chemical reactions in the body) are destroyed and most of the vitamins and minerals become inorganic and therefore bio non available.


In addition, dietary fiber in plant foods, contributes to proper functioning of the intestinal transit, acting as "sweepers" of the intestines. They absorb excessive fat and sugar (which constitute the food of the bad bacteria that colonize the intestine) eliminating them, and feed the good bacteria that have an important role in maintaining good health.

NB: The nuts (walnuts, almonds, hazelnuts, sunflower seeds ...) and dried fruit (figs, dates, dried apricots ...) should be eaten sparingly and preferably presoaked in order to reduce their fat and sugar content and make them easier to digest.
