Chocolate Truffles





Ingredients:
- 3 cups of dates soaked and pitted  
- 2 cups cocoa powder ( or carob for those who are allergic to chocolate)  
- Vanilla flavoring  
- 1-2 cups coconut flakes  
- 1-2 cups walnuts or almonds soaked and ground  
Blend the dates in a blender to make a thick dough
In a bowl mix the date dough with, cocoa powder , nuts or ground almonds or coconut flakes.
In a bowl, put 1 tablespoon cocoa powder, or more if needed.
With a spoon, take the date paste and shape into balls by rolling them in the cocoa powder. 
Refrigerate overnight if possible.  
The next day, roll back the balls in cocoa powder or coconut flakes or ground walnuts.
Keeps in the cooler or frozen for a longer period of time.
