Chocolate and Sprouted Buckwheat Soufflé

Ingredients:
- 2-3 Tbsp. of sprouted buckwheat seeds  
- 1 cup dried figs (presoaked if you want it light in the sugar )  
- 1 banana  
- 1-2 pears  
- 1 pinch of cinnamon  
- 1 vanilla pod  
- A small piece of ginger root juiced (crushed in a garlic press)  
- 1 tsp lemon juice  
- Organic lemon zest  
- 1-2 cups of coconut water or pure water (add gradually)  
- 1 small avocado pit (or a half of a large one)  
- 1/4 avocado  
- 1-2 tbsp. cocoa powder  
Blend all these ingredients until you obtain a creamy and thick consistency.  
Fill the ramekins with this cream, sprinkle some  cocoa powder on top and garnish with lemon zest . Dry in the dehydrator for about 1 hour, or in an electric oven  at 107,6 ° F (42 ° C).
