Refreshing Summer Salad
Ingredients:
- 2 tomatoes, diced
- 1 cucumber
- 1 green onion
- 1/2 red or yellow bell pepper, cut into strips, widthwise
- Some black olives pitted and sliced -
- Dried or fresh dill, chopped
- Sea salt to taste
- Some young leaves of romaine lettuce
Arrange the romaine lettuce leaves on a plate in the shape of flower petals.
Cut the cucumber in half lengthwise and then cut a thin strip that you will close by hooking the extremities one to another.
Put it in the middle of the trim and fill with diced tomatoes and chopped green onion.
Arrange red or yellow bell pepper rings around the center formed by the cucumber strip.
Cut half slices of cucumber and place them around the center on the bell pepper rings.
Sprinkle with dried dill and garnish with black olive slices.
Serve with a Tamari dressing or with dressing of your choice.
