Ingredients:
For two portions or depending on the size of the tomato :
- 1 coffee cup coconut pulp ( or coconut flesh - the taste of coconut will be more pronounced )
- 1-2 tbsp lemon juice
- 1 pinch of cumin
powder
- 1 pinch of paprika
powder
- 1 tablespoon of minced onion
- Fresh or dried dill
- Sea salt to taste
- Ground green pepper to taste
- A little water if necessary
Put all these ingredients in a bowl and mix with a dipping blender.
Add in pitted olives, peppers and cucumbers cut into small cubes.
Stuff the hollowed tomatoes and decorate the surface of some diced pitted olives, bell peppers and cucumbers.
Sprinkle some dried dill on top.
