Mini Nori Sushi



Ingredients:


For this recipe you can use the cashew nut dip recipe or:
- 1 cup sunflower seeds soaked (few hours) 
- 1 cup water 
- 1 small onion 
- 1 teaspoon garlic powder 
- 1 pinch of salt 
- 1 tsp lemon juice 
- Apple cider vinegar 1 tsp (optional) 
Blend well until the consistency of a thick cream.


Add in:
-1 tbsp. finely grated celery root.
- 1tbsp. grated cauliflower
- Alfalfa sprouts
- Spinach leaves (chopped)
- Cut the sheets of Nori sushi (seaweed sheet) into 4 squares.
Place them one by one, on a baking paper sheet, smooth side towards the table.
Spread on the mixture obtained, leaving a bare board. (See photo below)
Arrange in the middle and on the length, tomatoes, avocado, and olives, diced.
Roll the Nori Sushi sheet with the aid of the baking paper sheet if necessary and pressing the roller at every step. 
Close one side by pushing the sheet toward the inside of the roll.
Chill and serve immediately.
